The sharpening system you are referring to sounds like the Lansky system or one of its knock-offs. It works very well and can quickly put an edge on a knife you can shave with. Yes, 440 stainless can wear out the coarser, softer stones rather quickly. Lansky makes a set of diamond stones that will solve this problem.

Some are pretty cool. They are all 440. Some needed a touch up, and the hardness has worn my sharpening stones down. I had the system where a vice clamp of sorts held the blade, and the stone was on a stick. The stem of the stick went through a precise hole to put the stone at a certain angel to the blade. I know that blade placement could effect that angle, but I trusted this more than my own freehand.
