I like the product Quikrete. Make sure to get the concrete mix because that is the strongest mix. You can get it at Lowes for about $5 a bag. If available, try the pro set version. We used that in the mortar mix and did a whole wall with those cultured stones. That stuff is like peanut butter when it's mixed and about as sticky. I tried other types of their mortar and some from HD and nothing worked as well.
In the concrete mix they have the quick setting which says it will dry in about 4 hours.
