There are polyurethane varnishes with colour in them. If I understand your 
situation though the surfaces will never be seen. You can however use any 
quality paint, I would recommend a good quality water resistant pain, I am 
partial to melamine paints because they are so durable. Most good even water 
based paints will do just fine, acrylic or latex. You just want to seal the 
edges and often it gets ragged and soft because of things like rising steam 
from a kettle or moisture rolling over a counter edge and being absorbed or 
wicks up into the wood particles. Stop that and you stop the problem.
