When I bought my Tapcon screws @ our local lumber yard, they told me they only came in one diameter. They had different lengths and for the size I got I needed a 3/16th drill bit

Precisely. Most of the time, the right sized bit comes with the screws, sometimes it just tells you the correct size bit.
