Hi Sammie;
If your teacher is sighted, you could always print your lessons and fax them
to her from your library or your office.  I am sure there are other
locations.  Even mail would work.  You could send an e-mail copy and a
printed copy to back yourself up.  
She sure is not treating you very fairly.  I would report her actions to the
NFB and to the college.  she is taking advantage of your handicap.
Stand up for your rights and get some support.

I've never had this problem but perhaps it's because I'm using a QT keyboard

and I have never sent written email using my BN.

The only ways I can think of until the problem gets fixed are  simply this: 
(1) Send all email using a PC or (2) put the assignment on a CF card or 
floppy disk or (3)  print the assignment.  If your teacher has the ability 
to read CF cards on her PC, I'd go for option 2.
