Hi Angie,
Once you've written your message, press "escape" (QT) or Space
with E, (BT). When it asks you if the message is ready to send,
say no. You are then put into the fields such as who to send to,
and subject. When you get to the subject field, you can type in
the subject you like. Press Escape again, and when asked if it's
ready to send, type Y for yes.
