I notice that it only tries to pair a few times. Then the phone stops looking for the apex... The searching button is "dimmed" and iphone says it's "in progress."

Yes. Technically, pairing is never lost, it is just that the apex is
not in terminal mode. This is made clear when you go to type something
on the iPod and no keyboard appears, because the iPod still thinks the
terminal is active. Deactivating it involves turning off bluetooth on
one device or the other or, and far easier, just locking then
unlocking the iTouch with the apex not in terminal mode. If no
terminal is found when the iTouch first searches, it won't pair.

Exactly.  I have only had to re-pair a few times in the nearly 12
months I have had my iPod, and much of that was due to iOS
updates.
However, after updating to iOS 5.0.1 just now, I had no problems,
so
even that occasional inconvenience seems to have gone.
Mostly, I enter terminal mode and then unlock my iPod, and it is
ready
to go.  The iPod only searches for displays when it is unlocked,
not
all the time, so you have to have the apex ready before using the
iPod.  Once that is done, though, you can do anything you want on
the
apex and re-enter terminal mode when you want to keep using the
iPod
(or iPhone or iPad).
