Under Basics, Options, Braille, in JAWS, choose the BrailleNote in the list. Choose the port you are using--Com1 or whatever. You'll have to restart JAWS after you make this change. Before you do that, though, get the BrailleNote hooked up to the computer and go to "terminal for screen reader" by pressing T from the main menu. Then when JAWS starts, if all has gone well and the gods are with you, you will have Braille on the BrailleNote's display.
As far as not having JAWS talk, I just turn my speakers all the way down when I want Braille only.
