As a newbie, I'd like to contribute to this great group! Old Order Amish Bread
Serves: Makes 2 loaves Prep time: 1 hour Category: Sweet Bread Method: Conventional Ingredients: 5 to 6 cups of bread flour 1 pkg active dry yeast 1/3 cup sugar 2 tsp salt 1 1/2 cups hot water 1/3 cup olive oil Prep: Dissolve the yeast in the hot water. Add oil. Set aside. In mixing bowl, cmbine flour, sugar and salt. Add liquid mix. Mix until dough scrapes itself from the sides of the bowl. Turn onto a flowred surface. Continue to add flour as needed, kneading constantly. Once the dough has an elastic texture to it ( no longer breaks when pulled) cover with olive oil and let rise in a warm, draft free place about an hour (depending on quality of yeast and bread flour) When dough has doubled in size, punch down the dough removing all air bubbles. Knead until elastic again. Seperate dough in two with a dough scraper. Form into loaves. Bake at 375 for 20 minutes or until toothpick inserted in center comes out clean. VARIATION: Garlic Knots Instead of forming loaves, seperate the dough into about 8 balls. Roll the balls into long ropes. Form each rope into a pretzel shape, brush with olive oil and sprinkle with garlic salt and Italian Seasoning. Bake at 350. >From Shelly of Ohio ------------------------ Yahoo!
