Honey Feta Griddle Bread

4 ounces feta cheese
2 tablespoons honey
1/2 teaspoon salt
1/2 cup all-purpose flour, plus more as needed

In a large bowl, mash the feta, honey and salt together with a fork until well 
combined. Add the flour and mix until dough forms. Turn the dough out onto a 
work surface and knead briefly to incorporate the flour. Cover with plastic 
wrap and allow to rest at room temperature for about 20 minutes.
Divide the dough into 12 equal portions. Lightly flour a work surface and roll 
each dough section into a very thin circle about 3 inches in diameter.
Lightly oil a nonstick griddle and heat over medium-low heat. Grill each dough 
round until golden, turning once, about 1 minute per side. Oil the griddle 
after cooking each dough round. Serve warm.
