Whole Grain Ham, Cheddar and Scallion Scones

1 1/2 cups all-purpose flour
1/3 cups ground flaxseed
1 1/2 cups old-fashioned rolled oats
1/2 cup sugar
2 1/2 tablespoons baking powder
1/2 teaspoon salt
1 1/2 cups heavy cream
1 1/2 cups lean ham, sliced into -inch cubes
1/2 cup white cheddar cheese, sliced into -inch cubes
3 stems, scallions, cut into -inch pieces
2 tablespoons Half-and-Half combo milk and cream.

Preheat oven to 375 degrees.
In a large bowl, combine the flour, flaxseed, oats, sugar, baking powder and
salt.
Add the heavy cream, ham, cheese and scallions to the dry mixture and use a
wooden spoon to combine until a smooth batter is formed. Batter should be
fairly wet.
Place the batter onto a lightly floured surface, forming a round disc about 2
inches thick.
Using a sharp knife, cut the disc into 10 or 12 triangles.
Lightly brush the triangles with Half-and-Half, and place on a cookie sheet.
Place the scones in the oven and bake for about 20 minutes or until golden
brown on top. Let cool for 15 minutes before serving.
Variation
For other flavors, substitute the ham, cheese and onion with 2 cups of golden
raisins, frozen blueberries or chocolate chips.
