Apple Pineapple Bread
3 cups all-purpose flour
2 tsps. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
3/4 cup chopped walnuts
1 1/2 tsps. cinnamon
3 eggs
2 cups sugar
3/4 cup oil
2 tsps. vanilla extract
1 8 oz. can crushed pineapple
2 cups shredded apple
Grease and flour two 9 x 5 inch loaf pans. In a medium bowl combine the flour,
baking soda, salt, baking powder, chopped walnuts and cinnamon. Set aside.
In a large bowl, beat the eggs lightly and add the sugar, oil and vanilla. Beat
until creamy. Stir in the pineapple with its juice and the apples. Add the dry
ingredients, stirring just until moistened. Spoon the batter into the prepared
loaf pans. Bake at 350 degrees for 1 hour or until a toothpick inserted comes
out clean. Good serve with cream cheese.
