Banana Pineapple Coffee Bread
2 cups sugar
1 cup vegetable shortening
1 15 oz. can crushed pineapple, drained
3 small to medium bananas, sliced
4 eggs
2 1/2 cups flour
1 tsp. salt
2 tsps. baking soda
In a large bowl cream sugar and shortening. Beat in drained
pineapple and bananas. Beat in eggs, one at a time.
Combine remaining dry ingredients and blend into batter. Turn into a greased
and floured 10 inch Bundt or tube pan.
Bake at 350 degrees for 45 to 50 minutes. Cool in pan for 15 minutes
before removing.
Makes 12 servings.
