Hello Linda....if your pan/pot/dutch oven. is similar to our two, the 
bottom is very likely black or burned, which is very difficult to avoid, 
with long time usage. This will cause burning on the bottom crust. If 
the pot will go higher in the oven, then raise the bottom rack a notch. 
Ours are very black, both of them, and it is for that reason that I do 
not do this bread. I intend getting a Chinese one, which are good for 
over 500 F when I find one with some sort of handles, all the ones I 
have seen do NOT have anyway of grasping the pot, other than with heavy 
duty oven mitts. If you watch Eric's videos you will see that he uses 
very heavy oven mitts.  Cheers, old Doug in BC
