Golden Lemon Bread Recipe

 

  a.. Prep: 20 min. Bake: 40 min. + cooling
  b.. Yield: 16 Servings

Ingredients
  a.. 1/2 cup shortening
  b.. 3/4 cup sugar
  c.. 2 eggs
  d.. 1-1/2 cups all-purpose flour
  e.. 1-1/2 teaspoons baking powder
  f.. 1/2 teaspoon salt
  g.. 3/4 cup 2% milk
  h.. GLAZE:
  i.. 1/2 cup confectioners' sugar
  j.. 2 teaspoons grated lemon peel
  k.. 2 to 3 tablespoons lemon juice
Directions
  a.. In a large bowl, cream shortening and sugar until light and fluffy. Add 
eggs, one at a time, beating well after each addition. Combine the flour, 
baking powder and salt; add to creamed mixture alternately with milk. 
  b.. Pour into a greased 9-in. x 5-in. loaf pan. Bake at 350° for 40-45 
minutes or until a toothpick inserted near the center comes out clean. Place 
pan on a wire rack. 
  c.. Combine the glaze ingredients; immediately pour over warm bread. Cool 
completely before removing from pan. Yield: 1 loaf (16 slices).
Nutritional Facts 1 slice equals 165 calories, 7 g fat (2 g saturated fat), 28 
mg cholesterol, 125 mg sodium, 23 g carbohydrate, trace fiber, 2 g protein.
