We lost our beloved Instahot when we sold our home a year ago (were WE lucky!), so I use the hot water boiler (or a microwave) for pre- heating cups (when I forget to put them on the stainless cover on top of the machine) and for the frequent Americanos when I am too lazy to texture milk (Lactaid, to be specific, which textures beautifully). Perhaps it is because we do have fairly frequent draws from the steam boiler that we don't seem to have a funk problem [or could it be that we have accommodated to it? That is scary....]. I would have thought that the high heat in the boiler would have precluded the growth of any bacteria until a saw a National Geographic special a few years ago which showed some hot water and steam jets on the ocean floor where some person actually took some samples and cultured a bacteria that only grows at that temperature and which had never been identified before. Amazing.... At present we have no plans to culture the water in our steam boiler...
