Well, I do not want to imply that all Portafilter gauges are inherently accurate. The portafilter gauge is the same type of small pressure gauge as mounted on the machine, so they probably have the same likelihood of inaccuracy. I bought a large pressure gauge that claimed 1% accuracy, and had a tough time finding the fittings to adapt it to the portafilter. I think I posted photos of the setup on this forum.
Yes, if you can tell by taste one pressure from another, then I would agree that the actual pressure does not matter. I am not in that class. In fact, I mix milk and flavor to all my espresso, so probably it does not matter what I do, I will not be able to taste any difference.
