Hi,

I’d appreciate your thoughts on shot parameters. I realize that every
machine and batch of beans are different but my post is referring to
parameters that are out of the norm. For example, I have been pulling
great (at least to my taste) shots with Black Cat decaf roasted within
the last week using parameters I posted in another thread:

Beans = 18gm
Two 30 lb tamps with an Espro tamper
Temp = 202F
Volume measured be weight = 2 ounces
Time = 38 seconds*
*Measured from the time I lift the lever, first drops around the 6
second mark.

Just today I wanted to try a little less coffee beans and pulled an
even better tasting shot with better body with the following:

Beans = 16gm
Two 30 lb tamps with an Espro tamper
Temp = 202F
Volume measured be weight = 2 ounces
Time = 60 seconds*
*Measured from the time I lift the lever, first drops around the 8
second mark.

Soooooooooooo in this case my question is about the time. Is 60
seconds ridiculous for an extraction time measuring from the time I
lift the lever on my BIII-R????? Will this kill the pump or blow the
boiler or a line? I’ve been told just worry about the taste and or the
level of blonding. Both were ok during this shot but it took a long
time. Should I worry about decreasing the fineness of the grind to
decrease the extraction time or not.

The only reason I am meticulously measuring all this stuff is because
I am relative new to making this kind of espresso…ya know…good
espresso. It helps me develop a feel for my shot and avoid repeating
mistakes.

Also, I see lots of cool vids on youtube where guys are using the same
Bodum cups that I use and state they are pulling 1 or so ounces by
volume. However, I have weighed LOTS of shots using a MyWeigh scale
during the extraction in both the 2 ounce Pavina and the 3 ounce Assam
Bodum cups and I know they are waaaay underestimating the weight. For
example, my 3 ounce Bodum Assam cups need to be filled almost to the
rim to obtain a volumetric weight of two ounces. I am guessing this is
due to the foam crema having less weight per unit volume.

Regards,

Joe
