I'd be interested in seeing numbers backing up that blog post... how quickly 
does the alkaline content increase while the water is sitting in the boiler?  
This certainly makes me think about whether or not I should leave my Brewtus 
sitting hot all the time, but has anyone actually tested and compared pH and 
mineral content from water coming through DB and HX under normal operation?  I 
imagine if I just turn on the Brewtus, let it heat, brew, and then turn it off 
when I'm done, that it isn't going to have a chance to make the water more 
"stale" than an HX machine.

My fairly non-scientific answer to why I went with a Brewtus:
* DB gives me better control over brew temperature, which is especially 
important to me since I play around a lot with pulling shots of varietal beans 
vs blends. Exact temperature makes a HUGE flavor difference for varietals.
* I knew that if I bought a HX I would always consider it a "stepping stone" 
machine and would eventually want to buy a DB.  This kept me from spending 
money in the long run.
