Your brew pressure is too low and won't work wel at 4-5 bar. You have a new machine which should have the newer OPV with the brass screw head. If your OPV has a white plastic screw head then its not adjustable even though it looks like it is and you'll need to buy a new one. The screw shortens a spring, which increases pressure on a ball which diverts water to the brew head. When screw is out water is diverted away too early. If its out too far it doesn't work well. You can adjust it when the machine is hot, but not while it is brewing. 1) put in the portafilter blank and run pump to see pressure. 2) turn screw in a little (righty-tighty with flathead screwdrive) and keep measuring until pressure is where you want it. Try 9 bar, or to taste. The new unit with brass screw is well made, you can take it apart if its not working right (but from deep inside the machine). Eric
