Welcome to Italian espresso machine wiring. Every one I've ever seen has been like that. The only machine I've ever even partially rewired was my 2 group Rancillio Lever which originally had the wires to the 3 heating elements daisy chained at the boiler and now has individual 14ga wires to each element. Three elements so it can be wired single phase or 3 phase. If I was going to re-wire a Brewtus I'd make sure the wires to the heating elements were a size bigger to help keep the terminals cool.  I have plenty of those white plastic terminal covers and original Italian crimp terminals if you need any, but they are open barrel terminals and you need the correct crimper or they are useless. I'll have to see what I paid, but it wasn't much.

As long as the heaters are first in line for the neutral it shouldn't be to bad, but you're correct it's not optimal and the crimp terminals are not really designed for two wires.  But with properly sized terminals and the correct crimper all you really lose is proper insulation support.
