I've done it before and just parked in Trenton and took the train up, $14.

You can take the train in and park at any number of safe places including Princeton, Edison (Metropark). You come in to Penn Station and can get the west side subways; for east side subways you take a subway from Penn Station to
Times Square and the subway shuttle to Grand Central where you can connect to the eastside routes.
