It's going to be a major job for me though... with my current diet, so many
of the foods I eat contain gluten. I will have to reshape my diet very
significantly. Fortunately, I have already found a source for gluten free
bread. Gluten free tortillas will probably be harder to come by though, and
may end up being a home cooked item.


I was hoping that reduced consumtion would be adequate, but I don't think
that is going to cut it.  At first, I was feeling great with the lowered
quantities of gluten contining foods, but I think my body has already
adapted to the lower dosage.  Now two slices of wheat bread seems enough to
have a significant effect on me.  It looks like it's going to have to be an
all-or-none thing.

Apparantly, I should have a similar problem with dairy, though I have never
had oppertunity to notice it because I quit eating dairy products years ago.
Casien (a protein found in milk) is very similar to gluten in structure and
also acts like morphine in individuals with the gluten problem.

I have a friend with what sounds like a very similar problem. He's a vegetarian who discovered he was feeling overwhelming tiredness after he ate wheat or dairy products. His solution was to basically stop eating those things altogether, since even small amounts would affect him.


I think after a long period of time (more than a year), he was able to start eating them again, in relatively small amounts, without triggering the reaction. He's moved to Tuscon, so I don't talk to him as much as I used to, but I have the impression that now, 5+ years later, it's not nearly as big a problem for him.
