Keeping the decisions on the field rather than going to an observer/referee seems to be what protects Ultimate from going down the 'gamesmanship' route of sports such as football.
Having taught the game to undergrad students on our PE & Sports Studies course, it's always the 'football players' amongst the group that have an issue with self refereeing. As a consequence, they either learn not to push their luck or hate the idea that the disc goes back and so don't select to play it in future. There also seems no need for increased competition to lead to the need for officials on the basis that largely if you don't like the idea of self refereeing and the SoG and all that that means, then you don't usually play! Though I accept that we all get pissed off with poor calls and bad spirited players, the alternative of players appealing for everything and anything to an official, not unlike football, is a slippery slope we don't want to go down.
