Supposed to be just one.  The value in the field is the "height" of the 
displacement, so a zero-value in any 'interior' cell surrounded by non-zero 
cells should be a hole.  That may get screwy with interpolation, but I believe 
it should still be a hole.

Not at all.  It may go through some BoT routines during conversion, but it does 
an efficient adaptive grid-trace during raytracing.
