For rest of the things Sean has given an excellent reply (Thanks Sean!) and I agree with almost everything in that. Regarding package based architecture, it's a great way to manage the app but would also require a lot of refactoring. I think first priority would be to get the current architecture up and running properly, with blaze and without making package based architecture compulsory. However, when adding something new keep the package based architecture in mind and if possible make a package out of it.
