I don't know the Windsor, but if it behaves anywhere near the old
BrewFerm dry yeast, you have nothing to worry. You may want to rehydrate
it, as its instructions probably tell you. That alone will increase the
number of surviving cells by over 50%.


Thank you, Heikki - now I can relax and have a homebrew:-) I will stick to rehydrating the yeast and see what happens.

Besides, 1.065 is not really strong stuff - don't worry before 1.080 or
1.100 !!


(100-15)/7.5 = 11.3! Yeah, that's strong, I'd say. I am going to aim for a breezer at just 6-7% :-)
