A little simpler:
"\\\\\\([Vv]verb\\)\\(?:\\[[^]]*\\]\\)?[|{]\\([^|}]*\\)[|}]"
How does your code work on this example:

? I admit, this is a mess, but maybe we can come up with a solution
within AUCTeX; I have to think about it, though.
