As Mart wrote in his reply, my initial issue has been resolved. I'm not sure, though, if creating a bug report for this would be appropriate, as IIRC emoji have been a problem in terms of displaying them ever since I installed IceCat (both the downloads from gnu.org/s/gnuzilla and Guix). Working around the issue at hand is quite easy once you're aware of the about:config options and are not afraid to use it. For me, it wasn't a problem once I got the know-how from Mart, but it may confuse "normal" users who most likely expect emoji to work out-of-the-box.
