it is in fact easy to produce one if you have build LilyPond yourself,
just say
make -C Documentation/user out/lilypond-internals.pdf
However, you don't want to do it, since the resulting document is
644 pages long. The problem is that most of the text is just
repetitions, since the documentation of a property, for example,
is repeated for every object that uses the property.
Just as you, I normally prefer to read on paper than on screen, but in this case I think that the online version is a much better choice because of all cross references that let's you navigate back and forth.
