Really, you shouldn't be.  Sure, there may remain places where
failures are not properly controlled, but I can tell you be experience
that it is a effort that is worth.  It's like deciding that you
compile with -Werror -Wall: it is definitely an initial cost, but the
return on investment is far greater.  I spent hours debugging
texi2dvi, and set -e was often my friend.  I want my friends to meet
my friends and be friends altogether :)
