Apple Sponge

4 Large Apples -- 800Gm
1/4 Cup Castor Sugar
1/4 Cup Water
Sponge Topping
2 Eggs
1/3 Cup Castor Sugar
2 Tablespoons Cornflour
2 Tablespoons Plain Flour
2 Tablespoons Self Rising. Flour

Peel, core, quarter and slice apples, combine in pan with sugar and
water, cover, cook about 10 minutes or until apples are tender.
Spoon hot apple mixture into deep 14cm round ovenproof dish (6 cup
Capacity) spread with topping. Bake in moderate oven about 25
minutes.

Sponge topping; Beat eggs in small bowl with electric mixer about 7
minutes or until thick and creamy. Add sugar gradually, beat until
dissolved betweens additions. Fold in sifted flours.

Serves 4 to 6
Recipe best made just before serving.
Freeze; Not suitable.
Microwave; Apples suitable.

NOTES : It is important to have the apple mixture as hot as possible
before topping with the sponge mixture. The heat from the apples
starts the cooking process.
