1 1/2 cups vegetable oil
2 cups brown sugar
2 cups carrots -- finely grated
4 eggs
1 teaspoon vanilla extract
2 cups mixed candied fruit
1 1/2 1 1/2-2 cups raisins
1 cup walnuts -- chopped
3 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg
Place oil in a large bowl; gradually blend in sugar. Mix in carrots,
eggs, vanilla, candied fruit, raisins and nuts. Sift together flour,
baking powder, baking soda, cinnamon, salt, cloves and nutmeg; mix
flour and carrot mixtures together well. Pour into a well-greased 6
X 10-inch loaf pan. Bake at 350 F for 1 hour or until a toothpick
inserted in the centre comes out clean.
