As for me, I often do two walk-throughs...and I am on the west coast. On a pretty good night I can get the dancers up to speed at the start of the second walk-through and signal the fiddler to roll-in the music. With only the fiddle playing it still works as a "walk-through" but it adds excitement and a feeling of accomplishment for the dancers.
I almost always call one "no walk-through dance" during the first half of the evening to help build the confidence of the dancers.
