The biggest difference is, firebird was written as an
attempt to slim down mozilla across all platforms.
camino was written with the purpose to play nicely
with the mac platform, and no other.

you'll notice the "little" differences, such as:
if you right click on camino's dock icon, you can see
your bookmarks.  if you view the preferences panel, it
looks like a normal mac's preferences panel.  if you
look at a webpage's forms, you'll notice that in
camino they are native aqua controls, but in firebird
they are ugly grey buttons and widgets :)

the tabs are native aqua tabs, not a theme hack.

You'll also notice that camino can import your
bookmarks directly from safari.  i'm sure i missed
some, but that's the major ones.
