'Unbelievable treasures and fascinating
history await' the visitor to the Arabia
Museum in Kansas City, Missouri. Thanks to the Internet you can
take a virtual tour from your own home. The museum staff issues a
personal invitation to 'explore our museum and learn how the handsome steamer
Arabia prospered on the rivers, perished in 1856 and was finally rediscovered
132 years later, precious cargo intact. This exhibit . . . is many
things: history, ingenuity, tragedy, adventure, perseverance, preservation
and a tribute to the pioneer spirit.' The Arabia story is presented,
chapter by chapter, starting with Head'n West, through the sinking of the
steamboat along with 400 barrels of the finest Kentucky bourbon to the
rediscovery of the wreck in a Missouri cornfield and finally the raising
of the Arabia, naturally after the harvest of the corn that was atop!
The treasures of the Steamboat Arabia offer 'a unique perspective of frontier
life.' In the words of the museum staff, "This is Life! Come
explore!"

van left a gaping hole in the front of my father's mattress store, Dad
wasn't about to close down. On the contrary, after boarding up the front
of the building, he had my brother spray-paint the following message on
the plywood: "Store open. Drive-thru closed."

INGREDIENTS:
1
cup bacon drippings
1 cup all
purpose flour
8 stalks celery,
chopped
3 large yellow
onions, chopped
1 bunch green
onions, chopped
1 green pepper,
chopped
2 cloves garlic,
minced
1/2 cup parsley,
chopped
1 pound okra,
sliced
2 Tablespoons
shortening
2 quarts chicken
stock
2 quarts water
1/2 cup Worcestershire
sauce
Tabasco
sauce to taste
1/2 cup catsup
1 (16-ounce)
can whole tomatoes
2 Tablespoons
salt
1 large slice
of ham, chopped
2 bay leaves
1/4 teaspoon
thyme
1/4 teaspoon
rosemary
2 cups cooked
chicken, chopped
1 pound claw
crabmeat
3 to 4 pounds
boiled shrimp
1 pint oysters,
optional
1 teaspoon
brown sugar
Lemon
juice to taste
TO PREPARE:
Heat bacon drippings over medium heat, add flour slowly and stir constantly
until roux is a chocolate-like brown. This takes a long time.
Add celery, onions, green pepper, garlic, parsley and cook 45 minutes to
1 hour stirring occasionally. Fry okra in shortening until slightly
browned. Add to first mixture and stir well for a few minutes.
Add chicken stock and water, Worcestershire sauce, Tabasco sauce, catsup,
tomatoes with juice, salt, ham, bay leaves, thyme, rosemary. Simmer
2-1/2 hours. Add chicken, crabmeat, shrimp and simmer 30 minutes
more. (If using oysters, add with seafood.) Add brown sugar
and lemon juice. Serve in bowls over hot rice. Well worth the
time!
