We always try to close the gates, if they don't stay closed then
tough! Sometimes we will try harder to keep them closed, and usually I
pull away from the lock slowly so as not to knock them open again.

As to leaving them open on purpose... I hope people don't! Even when
not single handing it's very annoying on wide locks, as it involves a
trek to the top of the lock, back to the bottom, back to the top on
the other side, and back again (72ft x 4). It would also involve a
second crossing of the lock for the paddle - but then I would open it
on my way back, and sod the water.

Closing gates gates (especially the top ones) are easier done when you
are already at that end of the lock. When single handing up locks I
grab the back rope, let the boat drift out of the lock, then close the
gate (with a little help from the boat) before jumping back on. I tend
to rope the boat out when going down, but I guess a boat shaft on a
gate stay could pull the gate shut behind.
