the magic Lisp incantation is '(mac-emulate-three-button-mouse t) which now works a treat! I'm assuming that somehow you have this set, but it's not on by default. Ah... Indeed I've noticed you load something called mac-key-mode.el, I'm betting that's the critter responsible for setting your key bindings to the "correct" behaviour. Really I think this emulated three button mouse behaviour should be the default. It seems crazy that it's not!
