Are you sure? You can launch Carbon Emacs a second time, while the  
old working one is still running, to check that a new instance really  
has learned XeTeX by launching it as

        /Applications/Emacs.app/Contents/MacOS/Emacs &

which also allows you launch Emacs with options and arguments, and  
then XeTeX the Japanese-Chinese-English file ... Another way would be  
to open your init file, presumingly ~/.emacs, to check whether it has  
recorded your customisation.
