Enter "caret5 -help" at the command line. There is an option like --Cleanlooks or something like that that makes me happy with Caret on my Linux desktop. Give it a shot.
If it makes you happy, too, consider aliasing "caret" to "caret5 --Cleanlooks" (or whatever the option actually is). I'm not at a computer that has Caret installed.
