Colin You can reconstruct contours from any sectioning plane into a surface. But I believe the z axis will be that between sections, so you will need to rotate appropriately at the end.
A white matter surface sill be fine as long as the topology doesn't get messed up by thin gyral blades. It may be desirable to save it as a "fiducial" surface if you want to inflate or otherwise process further.
