Did you try
jpa.database.ddlAuto=update
If you say nothing, it's in createAnDrop mode (not very usefull..)
And none is just do nothing

We played with services and jpa, and it's a very bad idea. Interface buggy 
in 5.2.3 and there's much more support for json files.
