In brief, when you clone the CAS git repository you'd be on the development master branch by default which includes the latest and the greatest. The planned/upcoming release is '3.5.0-RC1'.
With regards to Git, I personally find the documentation here [2] an excellent starting point to understand the Git philosophy. I'd also recommend that you utilize a decent Git client for your platform or use the EGit plugin for Eclipse to fully take advantage of the tool.
