I have the Casey book and it is quite good, it starts out with the basics.  But 
it does not get terribly advanced, and in my opinion it caters to those who 
want the finished work "good enough" and not necessarily "perfect".  But it 
will cover the work that you want to do.  There is actually one on hull/deck 
repair and one for refinishing.  Get both, they are not expensive and both are 
worthwhile to have even considering my previous caveat.

If good enough is good, get some nice teak pieces to cover the round holes with 
and to inset the new instruments into.  Much easier and better looking than the 
"OK" fiberglass repair that I could manage.  But judging by your next question, 
I'm not sure if you want more teak... I'm curious.  Why do you want to replace 
nice warm beautiful wood with stainless?
