I wouldn't discount the water coming from some other area of the boat - not
just the stern. Remember when the stern is down the bow is up so water will
and can run into the bilge from the bow - have you looked to see if maybe
there's water leaking someplace up there - or it collected someplace else -
like under the settees and found it's way to the bilge when the boat heeled or
became stern down.

You need to find and fix your leak and I would start with the cockpit drains.
