I thought they were thinking of litmus paper for the colo(u)r scheme. If
I put my hand in bucket of concentrated sulphuric acid ...
it turns red, which proofs the universal colour scheme and fits the
litmus test :-)
So in theory you could safe the pH paper and use your fingers instead,
the disadavntage with this method is only that you don't get a colour
conversion when probing basic samples.
