The licensing information for your customers that pertains to OpenOffice.org 
is in the install.  The first time your client boots OOo the license is 
displayed and they have to sign off on it.   No physical paperwork is 
required although something with the standard scary "Stability Disclaimer" 
added to your own Warranty would be wise and in some jurisdictions, required.  
Check with your own State or National regulations.

The Files page is geared pretty much toward people doing Mirrors, have to work 
on that. 

The OOo Art project page (http://marketing.openoffice.org/art) has Art work 
that you can add to to docmentation or website and "OpenOffice.org inside" 
type labels

Because OOo is open source, customising a version tailored for your business 
is also an option. But that is probably better discussed on the OEM list.
