My bet would be casting issues.
the datetime field takes [what?] as a valid value.
the now() function returns [what?] as its value.
Do these two match? Do you need to use the dateFormat function to cast the
now() function return into something the datetime default will like?
My mySQL skills are very rusty. Could you try some tests?
Test what value now() puts into a text field as a default.
Test a couple of hard coded date formats in the default for the datetime
field to see what works as an input format.
test now() wrapped in dateformat() to see if you can match the two up.

I tried the default value on the field for Now(), thus
Every time a record is added to the database it sets that field to:
1/1/0000
The query is not the one who is inserting the NOW parameters, trying
to set it on the database itself. I have the field defined as:
DateTime.
