Kevin - I've used Photoshop and DWMX on Panther on a 350 Mhz Blue-and-White G3. I've even imported massive Raw images into Photoshop, and edited them with layers and masking and all the trimmings, then into equally ridiculously huge TIFFs without any issue aside from a short wait now and then for complex layer operations, etc. For that matter, I've been able to use iMovie quite well on my own Panther-running B&W G3, although the preview framerate is low. Not sure about Quark, though, so you'll have to dig around for performance on stone-age Mac hardware :)
