Andouille is made with chopped, not ground, pork. It needs at least 10% fat (much of which renders dring the smoking). It is seasoned with garlic and black pepper. Quite simple sounding, until you try to get the ingredients balanced. A good substitute is a sausage with a strong smoky flavor. You can add garlic. My parents use turkey smoked sausage to be health conscience. Hope this helps.
